This quick breakfast is packed with apples, raisins, carrots, coconut, pecans, and whole wheat flour for a delicious start to any day. Whip up a big batch, keep them in an airtight container in the freezer, and simply pop a couple in the microwave or oven for that fresh-baked feeling even on the busiest of mornings! These muffins are perfectly sweet and well spiced, making them a fan-favorite make-ahead breakfast for kids and adults alike.

What is a morning glory muffin?

Morning glory muffins were first introduced by chef Pam McKinstry at the Morning Glory Café on Nantucket Island in 1978. Since being featured in Gourmet Magazine, this delightful muffin recipe has continued to stand the test of time and grace breakfast tables across the country. Variations exist, but these muffins usually feature a lightly spiced batter packed with shredded carrot, shredded coconut, raisins, and nuts. Some recipes even call for crushed pineapple, adding an extra sweet and moist twist, similar to a hummingbird cake.

How long do morning glory muffins stay fresh?

Morning glory muffins will stay fresh and moist for up to 2 days when stored in an airtight container at room temperature or 7 days in the refrigerator. For longer storage, the muffins can be frozen for up to 3 months. Simply thaw them at room temperature or warm them up in the microwave or oven before enjoying.

Ingredients

  • 1 1/2 cups

    all-purpose flour

  • 1/2 cup

    whole wheat flour

  • 1 cup

    firmly packed light brown sugar

  • 1 Tbsp.

    pumpkin pie spice

  • 2 tsp.

    baking soda

  • 1 tsp.

    kosher salt

  • 3/4 cup

    vegetable oil

  • 1 tsp.

    orange zest plus 1/4 c. fresh orange juice (from 1 to 2 navel oranges)

  • 2 tsp.

    vanilla extract

  • 3

    large eggs 

  • 1/2 cup

    unsweetened shredded coconut

  • 1/2 cup

    pecans, chopped

  • 1/2 cup

    raisins

  • 4

    large carrots, shredded (about 2 c.)

  • 1

    large apple (like Honeycrisp or Gala), peeled and shredded (about 1 cup)  

Directions

    1. Step 1Preheat the oven to 375°F. Line a 12-cup muffin tin with cupcake liners.
    2. Step 2In a medium bowl, whisk together the all-purpose flour, whole wheat flour, brown sugar, pumpkin pie spice, baking soda, and salt.
    3. Step 3In a large bowl, whisk together the oil, orange zest, orange juice, vanilla, and eggs. Whisk in the coconut, pecans, raisins, carrots, and apple. Add the flour mixture to the carrot mixture, stirring until just combined.
    4. Step 4Fill each muffin cup with about ½ cup batter (they will be full). Bake until the tops are golden brown and a wooden toothpick inserted in the center of a muffin comes out clean, 25 to 30 minutes.
    5. Step 5Let the muffins cool for 5 minutes in the muffin tin before removing to a wire rack.

Tip: Shred the carrots and apple on the large holes of a box grater.
