If there’s one appetizer that’ll have your guests swooning before dinner even starts, it’s these crispy baked feta rolls with hot honey! They’re golden, flaky, and downright irresistible—kind of like a fancy cheese stick, but with a Mediterranean twist. Each roll is filled with creamy, tangy feta cheese and wrapped in buttery phyllo dough, then baked until perfectly crisp. And when you drizzle that warm spicy honey over the top? Oh, my. It’s a flavor explosion—sweet, salty, and savory all in one bite!

This recipe is simple enough for weeknight entertaining but elegant enough for holidays or dinner parties. The combo of lemon zest, garlic, and fresh dill brightens up the feta, making every bite taste fresh and vibrant. Plus, these rolls can be prepped ahead and baked right before serving—so you can actually enjoy your own party.

Serve these feta rolls alongside a negroni or a sidecar cocktail, as part of a mezze platter, or as a quick starter for family gatherings. They’re crunchy on the outside, creamy on the inside, and utterly irresistible.

What kind of feta cheese works best for feta rolls?

A good-quality block of feta (not the crumbled kind) is key. It holds its shape while baking and gives you a creamy, salty center you’ll love. Greek feta made with sheep’s milk or a blend of sheep's and goat's milk works well here.

Can you make feta rolls ahead of time?

Yes! You can assemble the rolls a few hours ahead, place them on a baking sheet, and refrigerate until ready to bake. Pop them in the oven right before serving for that perfectly crisp finish.

What is the best way to reheat feta rolls?

To keep them crisp, reheat the feta rolls in a 350°F oven for 8 to 10 minutes. Avoid the microwave—it’ll make them soggy instead of crunchy!

Ingredients

  • 3

    garlic cloves, grated

  • Grated zest of 1 lemon

  • 1 Tbsp.

    fresh dill, chopped

  • 1

    (8-ounce) block feta

  • 12

    (9-by-13-inch) sheets frozen phyllo dough, thawed

  • 6 Tbsp.

    salted butter, melted

  • 1 Tbsp.

    white sesame seeds

  • Hot honey, for serving

Directions

    1. Step 1Preheat the oven to 425°F. Line a baking sheet with parchment paper.
    2. Step 2In a small bowl, combine the garlic, lemon zest, and dill. Spread the mixture onto the block of feta, pressing to coat. Cut the feta into 12 (½-inch-wide) sticks.
    3. Step 3Work with 1 phyllo sheet at a time, keeping the remaining sheets covered with a damp towel to prevent drying out. Place a sheet on a clean work surface and lightly brush half of it with melted butter. Fold the sheet in half crosswise to form a 9-by-6-inch rectangle. Brush the edges with more melted butter. Fold each of the long sides over to form ½-inch borders. 
    4. Step 4Place a feta stick 2 inches up from the bottom edge on one short side. Fold the bottom edge of the phyllo up over the filling, then fold in the left and right sides toward the center. Brush with more melted butter and roll the wrapped feta upward into a snug cylinder and gently press to seal.
    5. Step 5Place the roll seam-side down on the prepared baking sheet. Repeat with the remaining phyllo sheets and filling. Brush the tops of the rolls with more melted butter and sprinkle with the sesame seeds.
    6. Step 6Bake until golden brown and crisp, 15 to 17 minutes. 
    7. Step 7Serve the feta rolls with hot honey for dipping.

Tip: You can assemble the feta rolls up to 1 day in advance and refrigerate them unbaked on a parchment-lined baking sheet, covered tightly with plastic wrap. Let them sit at room temperature for about 15 minutes while the oven preheats before baking. Baked rolls are best the day they're made, but leftovers can be stored in an airtight container in the refrigerator for up to 2 days
