Peppermint Meringues

They're the perfect Christmastime treat!

Ingredients

  • 3

    large egg whites, at room temperature

  • 1/4 tsp.

    cream of tartar

  • 1/4 tsp.

    peppermint extract

  • 1/4 tsp.

    kosher salt

  • 1 2/3 cups

    powdered sugar

  • Red gel food coloring

Directions

    1. Step 1Preheat the oven to 250 ̊. Line 2 baking sheets with parchment paper. Combine the egg whites, cream of tartar, peppermint extract and salt in a large bowl. Beat with a mixer on medium speed until foamy, about 2 minutes. Increase the speed to medium high and beat until thick and opaque, about 1 more minute. Gradually add the powdered sugar, about 1/4 cup at a time, and beat until stiff shiny peaks form, 8 to 10 minutes.
    2. Step 2Using a thin pastry brush, make 5 to 6 stripes of gel food coloring inside a pastry bag fitted with a large star tip. Carefully spoon the meringue into the bag. Pipe 2-inch meringues about 1 inch apart on the prepared pans.
    3. Step 3Bake the meringues for 1 hour, then turn off the oven and leave the meringues inside for 2 more hours to cool and dry.
