The chaffle is just one of the latest trends to come out of binge-watching TikTok videos. It’s a fun twist on breakfast that takes less than 10 minutes to make and only requires two ingredients: cheese and eggs. And if you happen to be following a keto diet, you’re in luck! These keto-friendly waffles are low in carbs, so you don’t have to wait for a special occasion or weekend brunch to get your fill. This guilt-free version is perfect for any day of the week.

Whether or not you follow the keto lifestyle, you’ll love trying this viral sensation for yourself. It's so easy to make and it’s the reason Ree Drummond was convinced to purchase a mini waffle iron in the first place. The original chaffle recipe is perfect on its own (dressed up like waffles with a drizzle of syrup), but you can also use it as a jumping off point for other chaffle creations that are both sweet and savory. Use them in place of bread on a sandwich, as a base for your favorite tostadas, or topped with sausage gravy in place of biscuits. Ahead, you’ll find a recipe for plain chaffles and a bacon-cheddar-chive version. 

What are chaffles made of?

There are only 2 ingredients in this miracle waffle: cheese and eggs. The reason it’s called a chaffle is because it’s basically a cheese waffle. Cheese + waffle = chaffle. Get it? The mixture of cheese and eggs makes a batter that’s light and fluffy with a crispy cheese exterior. Unlike regular waffles, chaffles don’t contain any flour, baking powder, milk, or buttermilk. The simple ingredients make it perfect for using in place of bread. But you can also spice them up with your favorite flavorings, like a splash of vanilla, a dash of cinnamon, or even a sprinkling of everything bagel seasoning.

Are chaffles healthy?

The good thing about two-ingredient dishes is that you know there aren't any sneaky ingredients hiding in your waffles. They’re low in carbs and keto-friendly, but just like anything that’s tasty and delicious, it’s always best to eat in moderation.

Can you use a regular waffle maker for chaffles?

Chaffles are meant to be on the smaller size so a small waffle iron, like the Dash mini waffle maker, works best, but you can also use a regular waffle maker or Belgian waffle iron, too. Just take note that the cook time may be longer (and the cheesy edges could crisp up faster) with the larger and thicker waffle makers.

Ingredients

Original Chaffles

  • 2

    eggs

  • 1 cup

    shredded mozzarella cheese

Bacon Cheddar Chive Chaffles

  • 2

    eggs

  • 1 cup

    shredded cheddar jack cheese

  • 2

    slices cooked bacon, finely chopped

  • 1 Tbsp.

    finely chopped chives

  • Shredded cheddar jack cheese, chopped bacon, and chives, for serving

Directions

    1. Step 1Preheat a mini waffle iron.
    2. Step 2For the original chaffles: Whisk the eggs together in a medium bowl. Stir in the cheese.  
    3. Step 3Scoop the batter into the waffle iron (using the recommended amount of batter for your specific waffle iron). Close the waffle iron and cook until the automatic light turns green, about 3 to 4 minutes. Transfer the chaffles to a cooling rack.  Serve immediately, or let cool to room temperature and refrigerate for up to 3 days.
    4. Step 4For the bacon cheddar chive chaffles: Whisk the eggs together in a medium bowl. Stir in the cheese, bacon, and chives. Cook as directed in Step 3. Top with more crumbled bacon, chives, and cheese, as desired. 

If your waffle iron does not have non-stick plates, give the cooking surface a good spray with a non-stick cooking spray.
