Pumpkin Pie Milkshake

You'll be craving one from Thanksgiving until Christmas.

On Thanksgiving, after way too much roast turkey, stuffing, and mashed potatoes, there's bound to be leftover pumpkin pie. But for many, one slice of the classic Thanksgiving dessert is plenty for the year. Enter: this decadent pumpkin milkshake. Give a slice (crust and all!) a whirl in the blender with ice cream and milk and you've got an irresistible treat you'll be craving every day until Christmas. If you don't find yourself with a plethora of slices leftover, fear not. The combination of pumpkin puree, graham cracker, maple syrup, and pumpkin pie spice has the same effect. 

What complements pumpkin pie? 

Fluffy whipped cream and creamy ice cream are classic pairings for a reason. They complement the pie and let the spices in the filling shine through. For an extra-indulgent touch, drizzle your pumpkin pie milkshake with caramel sauce. Craving a cocktail? Spiced rum or bourbon goes well with the warm spices in pumpkin pie. 

What ice cream flavors pair well with pumpkin pie?

You can never go wrong with vanilla, but a scoop of rich and crunchy butter pecan is a delightful alternative.

Ingredients

Pie Method:

  • 1

    slice pumpkin pie (about 1/8th of the pie)

  • 1 cup

    vanilla ice cream

  • 1 cup

    milk 

  • 1 1/2 oz.

    bourbon or aged rum, optional

  • Whipped cream, caramel sauce, and/or pumpkin pie spice, for serving

No-Pie Method:

  • 2 cups

    vanilla ice cream

  • 1 cup

    milk

  • 2/3 cup

    pumpkin puree

  • 2 Tbsp.

    maple syrup

  • 1/4 tsp.

    pumpkin pie spice, plus more for serving

  • 1

    large graham cracker sheet, plus more for serving

  • 1 1/2 oz.

    bourbon or aged rum, optional 

  • Whipped cream, caramel sauce, and/or pumpkin pie spice, for serving

Directions

    1. Step 1Pie Method: In the base of a blender, combine the slice of pie, ice cream, milk and bourbon or rum, if using. Blend on low for 15 seconds, then increase to high for 30 more seconds, or until creamy and smooth. Transfer to 1-2 tall glasses and top with whipped cream, caramel sauce and a sprinkle of pumpkin pie spice (or extra pie crust crumbs, if you’ve got them!)
    2. Step 2No-Pie Method: In the base of a blender, combine the ice cream, milk, pumpkin, maple syrup, pumpkin pie spice, graham cracker and bourbon or rum, if using. Blend on low for 15 seconds, then increase to high for 30 more seconds, or until creamy and smooth. Transfer to 1-2 tall glasses and top with whipped cream, a drizzle of caramel, and a sprinkle of pumpkin pie spice and extra graham cracker crumbs.
