Nothing beats the crunch from a good fried egg roll, but this shortcut recipe comes pretty close—and it's all thanks to the air fryer. Instead of submerging the egg rolls in bubbling oil, brush them with a light coating of oil before letting your air fryer crisp them to perfection. While not traditional, it's an easy and fun method that produces irresistible results. 

Store-bought coleslaw mix, along with pre-cut matchstick carrots, are amazing time-saving ingredients. Bonus: This style of carrot adds a bit more crunch than what you'd get by shredding carrots yourself. The pork mixture can be made up to 2 days ahead and stored in an air-tight container in the refrigerator.

How long do you need to cook egg rolls in the air fryer?

There are a lot of factors at play: The size of your egg rolls, the type of air fryer you have, and how many egg rolls are in the basket can all make a big difference when it comes to cooking time. For this recipe, a batch of egg rolls will need 9 to 10 minutes at 360°F. For crispiest results, make sure to leave room between the egg rolls in the basket to allow the air to properly circulate around them.  

Can I cook frozen egg rolls in the air fryer? 

Yes! This is a great make-ahead recipe that can be stored in your freezer. Place assembled but uncooked egg rolls on a parchment-lined baking sheet and freeze until solid. Once frozen, transfer the egg rolls to a zip-top bag and freeze for up to 3 months. Do not thaw before cooking; instead, add an additional 2 to 3 minutes to the cooking time.

Ingredients

  • 1 Tbsp.

    sesame oil

  • 1/2 lb.

    ground pork

  • 4 cups

    coleslaw mix

  • 1/2 cup

    matchstick-cut carrots

  • 1 tsp.

    freshly grated ginger

  • 2

    garlic cloves, minced

  • 3

    green onions, sliced

  • 2 tsp.

    soy sauce

  • 2 tsp.

    rice vinegar

  • 1/2 tsp.

    ground black pepper

  • 1/4 tsp.

    kosher salt

  • 1/8 tsp.

    Chinese 5-spice seasoning

  • 12

    egg roll wrappers

  • Nonstick cooking spray

  • 1 Tbsp.

    olive oil

  • Sweet chili sauce, duck sauce, or hot mustard sauce, for dipping 

Directions

    1. Step 1Heat the sesame oil in a large skillet over medium heat. Add the pork and cook until crumbled and cooked through, about 4 minutes. Add the coleslaw mix, carrots, ginger and garlic. Cook 2-3 minutes or until the cabbage has wilted. Remove from the heat; stir in the green onions, soy sauce, vinegar, pepper, salt, and 5-spice seasoning. Transfer to a plate and let cool slightly.
    2. Step 2Place 1 egg roll wrapper on a dry work surface with the points of the wrapper facing up and down (like a diamond). Place about 1/3 cup of the pork mixture in the middle of the wrapper. Dip your fingers in water and and dampen the edges of the wrapper. Fold the left then right points of the wrapper in toward the center. Fold the bottom point over the center. Roll toward the remaining point to form a tight cylinder. Press edges to seal. Place on a plate and cover with a dry towel. Repeat the process with remaining wrappers and pork mixture.
    3. Step 3Preheat the air fryer to 360°, if required. Spray the air fryer basket with cooking spray. Brush the tops of the egg rolls with olive oil. Working in 3 batches (4 at a time), place the egg rolls in the basket and cook 7 minutes. Flip the egg rolls over and brush with more oil. Cook for an additional 2 minutes.
    4. Step 4Serve with the dipping sauce of your choice.

If you have ginger paste in your refrigerator, use 2 teaspoons in place of the 1 teaspoon of freshly grated ginger.
