Creamed Peas

This is a great side dish for an Easter feast or for Sunday supper!

Ingredients

  • 2 Tbsp.

    salted butter

  • 1

    medium shallot, chopped

  • 2 Tbsp.

    all-purpose flour

  • 1 3/4 cups

    half-and-half

  • 3 cups

    frozen peas (from a 16-ounce bag), thawed

  • 2 tsp.

    distilled white vinegar

  • Pinch of freshly grated nutmeg

  • 1/2 tsp.

    kosher salt

  • Black pepper, to taste

  • 1/2 cup

    crispy fried onions (such as

    French’s)

Directions

    1. Step 1Melt the butter in a medium saucepan over medium heat. Add the shallot and cook until just softened but not browned, 1 to 2 minutes. Sprinkle in the flour and cook, stirring, until incorporated and bubbly, about 1 minute. Slowly stir in the half-and-half and bring to a simmer.
    2. Step 2Stir in the peas and cook until the sauce is thickened and the peas are just tender, 5 to 7 minutes. Stir in the vinegar, nutmeg, salt and a few grinds of pepper. Pour into a serving bowl and top with the fried onions.
