It's safe to say that anything for breakfast that doubles as dessert will be a crowdpleaser, so consider this baked oatmeal recipe a guaranteed big hit! With all the fudgy flavor of brownies, this oatmeal walks the line of health and richness perfectly, serving a nutritious start to the day while tasting absolutely indulgent. Add it to the list of overnight oats and breakfast casserole recipes to keep in your back pocket.

What is tahini? 

Tahini is a paste made from toasted sesame seeds and is considered a staple in many Mediterranean and Middle Eastern dishes. It's creamy and smooth with a deep nutty flavor, much like peanut or cashew butter. If tahini is not available, any nut butter can be substituted in its place—but give it a try!

How can baked oatmeal be served? 

Walnut brownie baked oatmeal is best served with softly whipped cream and fresh raspberries, but it can also be personalized to whatever is in stock in the fridge. Pour some whole milk or half-and-half over a warm scoop, or top with butter and maple syrup for extra sweetness. 

How should baked oatmeal be stored? 

Baked oatmeal is a great secret weapon when it comes to meal prepping. Once cooled, the oatmeal can be sliced and stored in an airtight container to freeze or keep refrigerated for up to five days. Reheat in the microwave for a quick breakfast idea!

Ingredients

  • 3 cups

    whole milk

  • 1 cup

    sweetened applesauce 

  • 1/2 cup

    tahini

  • 2

    eggs

  • 3/4 cup

    maple syrup

  • 1/4 cup

    light brown sugar

  • 4 cups

    rolled oats

  • 1/2 cup

    cocoa powder

  • 1 tsp.

    baking powder

  • 1/2 tsp.

    kosher salt

  • 1 cup

    chocolate chips, divided

  • 1 1/2 cups

    roughly chopped walnuts, divided 

  • Nonstick cooking spray

  • 1 cup

    heavy cream

  • 1 Tbsp.

    granulated sugar

  • Berries, to serve

Directions

    1. Step 1Combine the whole milk, applesauce, tahini, egg, maple syrup, and brown sugar in a large bowl. Add the rolled oats, cocoa powder, baking powder, salt, 3/4 cup chocolate chips, and 1 cup chopped walnuts. Stir to combine. 
    2. Step 2Transfer mixture to a greased 9-by-13-inch baking dish. 
    3. Step 3To bake immediately: Preheat the oven to 350°. Top with the remaining 1/2 cup of walnuts and 1/4 cup chocolate chips and bake for about 45 to 50 minutes, or until the oatmeal is set and no longer glossy. Let sit for 20 minutes. 
    4. Step 4To make ahead: Cover and refrigerate overnight (up to 12 hours). Remove the casserole from the refrigerator and let sit for 30 minutes. Top with the remaining 1/2 cup of walnuts and 1/4 cup chocolate chips and bake for about 45 to 50 minutes, or until the oatmeal is set and no longer glossy. Let sit for 20 minutes.
    5. Step 5While the oatmeal is resting, whisk the heavy cream and sugar in a medium bowl to soft peaks. Serve the baked oatmeal in slices topped with whipped cream and berries.
