French Toast Sticks

Your favorite brunch restaurant might have just lost another customer with these gorgeously caramelized, beautifully browned French toast sticks. The sheet pan is the hero of this recipe: it acts as an extra large skillet, cooking all the French toast at once instead of in multiple batches on the stove. Preheating the pan in the oven first and melting butter right on the surface ensures every stick gets perfectly cooked and golden. Another brilliant trick? Coating the egg-dipped bread in cinnamon sugar before baking to caramelize and crisp the outsides (it tastes as incredibly delicious as it sounds). Treat your family to this on the weekend for brunch or make ahead and reheat as a quick breakfast idea for kids during the school week—maple syrup, optional!   

Can you use any bread for French toast sticks?

If you're wondering what's the best bread for French toast, know this: dense brioche bread is perfect for absorbing the custard mixture, though you won't want to let it soak as the bread could fall apart. You can also use another dense bread like challah. Skip less-sturdy sandwich breads for this recipe. 

What's the difference between brioche and challah?

The big difference between these two breads is butter. In a brioche, butter is slowly added to the dough until it is extra rich. Challah skips the added butter.  

Can I skip preheating the sheet pan for French toast sticks?

Letting the pan heat up first jumpstarts the crisping on the French toast; it does the same for roasted veggies and toasted bread cubes. The French toast sticks might not brown as evenly without this step.

Ingredients

  • 8

    1-inch slices brioche bread

  • 3/4 cup

    , plus 2 tbsp. granulated sugar

  • 2 tsp.

    ground cinnamon

  • 3

    large eggs

  • 1 cup

    half and half

  • 2 tsp.

    vanilla extract

  • 1 tsp.

    orange zest

  • 1/2 tsp.

    kosher salt

  • 1/4 tsp.

    ground cardamom

  • 3 Tbsp.

    unsalted butter

  • Maple syrup and mixed berries, for serving

Directions

    1. Step 1Preheat the oven to 425°. Cut each slice of bread, top to bottom, into 4 (about 1-inch wide) sticks. Stir together 3/4 cup sugar and 1 1/2 teaspoon cinnamon in a medium bowl. Set aside.
    2. Step 2Whisk together the eggs, half and half, vanilla, orange zest, salt, cardamom, 2 tablespoons sugar, and 1/2 teaspoon cinnamon in a separate medium bowl until well combined. Working with 1 bread piece at a time, dip to coat all sides thoroughly in the egg mixture, allowing excess to drip off. Transfer to the cinnamon-sugar and toss to coat. Place the bread piece on a large sheet of aluminum foil. Repeat the process with the remaining bread pieces. 
    3. Step 3Place a large rimmed baking sheet in the oven to preheat for 5 minutes. Remove the preheated baking pan from the oven and melt 1 tablespoon of the butter evenly over the pan. Arrange the bread pieces in a single layer on top of the hot, buttered pan. Bake until the bottoms are golden brown and caramelized, 10 to 12 minutes. 
    4. Step 4Cut the remaining 2 tablespoons butter into ½-inch cubes. Remove the pan from the oven, flip the bread pieces over and sprinkle the butter cubes around the bread.  Continue baking until bread pieces are golden brown and crisp on both sides, 4 to 6 minutes. 
    5. Step 5Divide the French toast sticks evenly between serving plates. Serve alongside maple syrup and mixed berries.
