Spinach dip is the cool, creamy, fresh version of spinach and artichoke dip! For this recipe, hold the cheese—but keep the sour cream and mayonnaise around—to make an easy, stir-together dip, that can anchor any spread of New Year's Eve appetizers or Super Bowl snacks. This fresh-from-scratch dip makes a big batch, but it's guaranteed to disappear in no time flat!

What are the ingredients in a spinach dip?

Any good party dip starts with mayo and sour cream. They make a rich, thick base for all of the other mix-ins. Chopped spinach, garlic, scallions, Worcestershire sauce, water chestnuts, and diced pimentos give this dip great flavor, color, and texture. 

What kind of chips or crackers do you eat with spinach dip?

This dip is delicious with hunks of sourdough bread, crunchy pita chips, buttery crackers, or even colorful fresh veggies. 

Do I need to use a seasoning packet?

The Knorr spinach dip recipe is an old-school favorite, which uses a Knorr Vegetable Mix seasoning pouch to add flavor. This spinach dip recipe takes cues from this classic, but uses fresh ingredients in place of dried spices. Instead of a seasoning packet, use fresh garlic (grate it so that the tiny pieces are easy to mix into every bite), fresh scallions and drained, diced pimentos.

Is it best to use fresh or frozen spinach?

A package of frozen spinach works perfectly! It would take a very large amount of fresh spinach to be cooked down in several batches, to yield the 10-ounce quantity that is required for this recipe. Frozen spinach is easy to keep on hand in the freezer and thaws quickly.

What is the best way to thaw frozen spinach?

Most packages of frozen spinach advise cooking the spinach to 165 degrees before eating or using. To cook the spinach, place it in a small skillet with 1/4 cup of water. Cover and bring to a simmer over medium-high heat. Once simmering, reduce the heat to medium-low and cook for 4 to 6 minutes, or until the spinach breaks apart easily with a fork. Drain the spinach through a colander and rinse with cold water to stop the cooking.

How do you remove excess moisture from cooked spinach? 

The easiest way to do this is to wring out the spinach. Lay a clean, lint-free kitchen towel flat on the counter-top. Place the spinach in the middle, the fold up all four corners to make a pouch. Twist the fabric and squeeze the excess water out of the spinach, over a bowl of the sink.

How long is leftover spinach dip good for?

This dip will keep in the fridge for about three days. It's a great make-ahead snack to put together for holidays or get-togethers. In fact, it tastes even better after sitting in the fridge overnight!

Ingredients

  • 10 oz.

    package frozen chopped spinach

  • 1 cup

    sour cream

  • 3/4 cup

    mayonnaise

  • 1

    garlic clove, grated

  • 2

    scallions, thinly sliced

  • 8 oz.

    jar sliced water chestnuts, drained and chopped

  • 4 oz.

    jar diced pimentos, drained

  • 1/2 tsp.

    Worcestershire sauce

  • 1/2 tsp.

    kosher salt

  • 1/2 tsp.

    ground black pepper

  • 1 lb.

    sourdough bread loaf (not sliced), diced into 1" pieces, for serving

  • Assorted raw vegetables, for serving

  • Pita chips, for serving

Directions

    1. Step 1Cook spinach according to package directions. Drain in a colander then rinse well under cold water.
    2. Step 2Place the spinach in the center of a lint free kitchen towel. Pull the four sides up to make a bundle and squeeze very well over the sink to remove as much moisture as possible. Transfer to a cutting board and finely chop. 
    3. Step 3Stir to combine the sour cream, mayonnaise, garlic, scallions, water chestnuts, pimentos, Worcestershire sauce, salt, and pepper in a medium bowl. Stir in the spinach. 
    4. Step 4Transfer to serving bowl and serve with sourdough bread, cut vegetables, and pita chips, if you like.
