Spring Pea Tart

Creamy, herby goat cheese compliments a favorite spring vegetable on buttery puff pastry! 😍

This tart includes some of my favorite shortcut ingredients: frozen puff pastry, frozen peas, and herbed goat cheese!

Ingredients

  • 2 cups

    frozen peas (from a 10-oz. package)

  • 1

    sheet frozen puff pastry (half of a 17-oz. package), thawed

  • 3/4 cup

    grated gouda cheese (about 3 oz.)

  • 8 oz.

    herbed goat cheese

  • 2 tsp.

    honey

  • 1/2 tsp.

    kosher salt, plus more to taste

  • 1/4 tsp.

    black pepper, plus more to taste

  • 1/2 cup

    snow peas, trimmed and halved crosswise

  • 1/2 tsp.

    olive oil

  • Balsamic glaze, for topping

Directions

    1. Step 1Preheat the oven to 400º. Cook the frozen peas according to the package directions and set aside to cool. 
    2. Step 2Roll out the puff pastry on a piece of parchment into a 10-by-12-inch rectangle. Slide the parchment and pastry onto a baking sheet. Using a fork, score a border all the way around the edge of the pastry, about 3/4 inch in. Use the fork to prick the pastry all over the inside border. Sprinkle evenly with the gouda. Bake until puffed and golden brown, 18 to 20 minutes. Let cool for 15 minutes. 
    3. Step 3Meanwhile, combine the goat cheese, honey, 1 cup of the cooked peas, salt, and pepper in a food processor and process until smooth and green. 
    4. Step 4Spread the goat cheese mixture on the cooled tart. Sprinkle with the remaining 1 cup cooked peas. 
    5. Step 5Toss the snow peas with the olive oil and a pinch each of salt and pepper in a medium bowl. Top the tart with the snow peas and drizzle with balsamic glaze just before serving.
