When frosé first burst onto the scene a few years ago, it seemed like it might be a summer fling, but the frozen rosé slushie has become a sunny day essential! It’s bright, refreshing, and it’s super easy to make at home with just a few ingredients and a trusty blender. Freezing the rosé in a baking dish helps it freeze quickly and evenly. Just remember that alcohol takes longer to freeze than water, so give it at least six hours (or overnight) to solidify. Serve a round at your next cookout or poolside with friends. If you have a bigger crowd, consider whipping up another summery cocktail or two: Try palomas, red berry frozen sangria, or watermelon margaritas, too!

What does frosé taste like?

This drink is the grown-up strawberry slushie of your dreams. It has all the sophisticated notes of rosé wine, along with fresh strawberries, lemon juice, and a touch of sugar. It's a bit sweeter than just a glass of rosé—and even more refreshing!

What fruit can be used to make frosé?

Fresh strawberries are classic in frosé—just look at that pink color! You could also try blending raspberries or very ripe peaches. You'll just want to taste your drink and adjust the amount of sugar as necessary. If you're using fruit with seeds, like raspberries, strain the mixture through a fine-mesh strainer before blending it with the frozen wine.

Can you thicken a slushie or frosé?

If the frosé is thinner than you'd like, return it to the blender and add a few frozen strawberries. Unlike ice cubes, frozen fruit will thicken the slushie without watering down the flavor.

What kind of rosé is best for frosé?

Skip the very expensive bottles for this recipe; the fresh fruit and the ice-cold temperature will cover up the subtle flavor notes that come with pricier wines. A dry rosé is a great complement to the fruit and won't be overly sweet with added sugar.

Can you make frosé ahead of time?

Yes! The rosé must be frozen in advance for this beverage to have its signature frosty consistency, but you can also prepare the strawberry puree hours ahead of time and store it in the fridge. When you're ready to serve, add the strawberry puree and frozen rosé to a blender and blend it up. Because the majority of the work can be done in advance, this is the perfect cocktail for entertaining.

Do you have any garnish ideas for frosé?

If you want to get fancy with garnishes on your glasses of frosé, skewer a few fresh berries onto a cocktail pick or add a slice of lemon or even a cute mini umbrella!

Ingredients

  • 1

    (750-mL) bottle dry rosé

  • 1/2 lb.

    strawberries

  • 3/4 cup

    granulated sugar

  • 2 Tbsp.

    fresh lemon juice

Directions

    1. Step 1Pour the rosé into a 13-by-9-inch baking pan. Freeze until almost solid, at least 6 hours. 
    2. Step 2Hull and quarter the strawberries. Place the strawberries in a large bowl, stir in the sugar and lemon juice. Allow to sit, covered, for 30 minutes.
    3. Step 3In a blender, blend the strawberry mixture until pureed. Strain the mixture through a fine mesh sieve to remove the seeds. Place the mixture in the refrigerator until ready to use.
    4. Step 4To a blender, add the strained strawberry mixture. Scrape in the frozen rosé and blend. Pour into glasses. Serve immediately.
