Spiced Apple Mug Cake

Mugs aren’t just for enormous amounts of coffee: You can enjoy a warm, decadent apple cake at any time of day with a super easy spiced apple mug cake! No need to crank up the oven or accumulate dirty dishes—this simple spiced apple cake comes together in just minutes in the microwave. Envy apples provide balanced flavor for this treat, maintaining their delightful texture even after the cake cools. Finish the cakes off with ice cream, caramel sauce, and freshly chopped apples.

Ingredients

  • 2 Tbsp.

    unsalted butter

  • 2 Tbsp.

    whole milk

  • 2 Tbsp.

    light brown sugar

  • 2 Tbsp.

    granulated sugar

  • 1/4 tsp.

    vanilla extract

  • 1/2 cup

    all-purpose flour

  • 1/2 tsp.

    apple pie spice

  • 1/4 tsp.

    baking powder

  • Pinch of kosher salt

  • 1

    Envy apple

  • Vanilla ice cream, to serve 

  • Caramel sauce, to serve

Directions

    1. Step 1In a 14- to 16-ounce microwave-safe mug, combine the butter, milk, brown and granulated sugars, and vanilla extract. Microwave on high for 45 seconds. Stir with a fork until the butter is melted. Add the flour, apple pie spice, baking powder, and salt and stir with a fork.  
    2. Step 2Chop the apple into small dice, leaving the skin on. Stir ¾ cup of the chopped apple into the mug cake. Clean off any batter on the insides and rim of the mug. 
    3. Step 3Microwave on high until the top of the cake is set, about 2 minutes. Let cool for 5 to 7 minutes. Top with ice cream, and garnish with the remaining chopped apple and a drizzle of caramel sauce. Serve hot.
