When all of the shining heirloom tomatoes and juicy peaches are gobbled up, autumn arrives with its own bountiful harvest. This roasted delicata squash recipe is not only one of the simplest side dishes out there, it also shows off the beautiful shape of the fruit. Among all of the funky, bumpy, colorful gourds and squashes available, subtly sweet delicata squash has a delicate, scalloped shape to it. It is a great healthy fall side dish that still gets a nice, crispy coating of parmesan.

How do you tell if a delicata squash is ripe?

A ripe delicata squash is yellow or cream-colored with green and/or orange stripes. It should be firm and a little bit heavy, just like a juicy watermelon! Avoid squash that is light green, lightweight for its size, or has an off-color or soft spots.

Do you eat the skin of delicata squash?

This type of squash is so easy to prepare because there is no need to peel it. In fact, the name came about because it has a characteristically delicate skin. The squash has a perfectly edible and beautiful peel. It is also more tender than butternut or acorn squash, making it much easier to cut up.

How do you serve roasted delicata squash?

While these buttery, sage-scented, parmesan-coated squash slices are delicious on their own, they also make great compliments to other dishes. They would not only be delicious as a healthy side dish with seared pork chops, they also make versatile leftovers. Enjoy them straight out of the refrigerator on a salad, warmed up in a hearty harvest bowl, tossed with creamy pasta, or even baked into a quiche.

Ingredients

  • 2

    medium delicata squash (about 2 pounds)

  • 1/4 cup

    salted butter, melted

  • 2 tsp.

    chopped fresh sage

  • 2 tsp.

    seasoned salt

  • 1/2 tsp.

    ground black pepper

  • 1/2 cup

    grated parmesan cheese

Directions

    1. Step 1Preheat the oven to 425°F.
    2. Step 2On a large cutting board, cut one squash in half. Use a spoon to scrape out and discard seeds. Slice the squash crosswise into 1-inch thick slices and place slices in a large bowl. Repeat with the remaining squash.
    3. Step 3Pour the melted butter over the squash, tossing to coat. Sprinkle with the sage, seasoned salt, and black pepper. Add the parmesan cheese, tossing to coat.
    4. Step 4On an unlined baking sheet, place the squash in a single layer. Roast until golden brown, 25 to 30 minutes, flipping the slices halfway through. Serve warm or at room temperature.

Tip: Substitute 1/2 teaspoon of ground or dried sage for fresh sage, if you like.
