Gnocchi Alfredo with Peas

Gnocchi and peas are a match made in heaven!

Ingredients

  • Kosher salt, to taste

  • 1

    stick salted butter

  • 1 cup

    heavy cream

  • 2

    17.5-ounce packages prepared gnocchi

  • 1

    16-ounce bag frozen peas

  • 1/2 cup

    fresh parsley, chopped

  • 1/4 cup

    chopped fresh chives

  • 1 tsp.

    grated lemon zest

  • 1/4 tsp.

    black pepper

  • 1 cup

    grated parmesan cheese, plus more for serving

Directions

    1. Step 1Bring a large pot of salted water to a boil. Melt the butter in a large skillet over medium-low heat. Add the heavy cream, bring to a simmer and cook gently until the sauce comes together and reduces slightly, 4 to 5 minutes.
    2. Step 2Add the gnocchi and peas to the boiling water and cook according to the gnocchi package directions, about 4 minutes. Reserve 1 cup of the cooking water, then drain.
    3. Step 3Add the gnocchi and peas to the cream sauce along with the parsley, chives, lemon zest and pepper. Toss to combine. Add 1⁄2 cup of the reserved cooking water and return to a simmer.
    4. Step 4Remove the skillet from the heat. Sprinkle with the parmesan and toss to combine. Season with salt, if needed. Add some or all of the remaining cooking water if the sauce is too thick. Serve with more parmesan.
