Ingredients

  • 2 Tbsp.

    kosher salt

  • 2 Tbsp.

    smoked paprika

  • 1 Tbsp.

    black pepper

  • 1 Tbsp.

    garlic powder

  • 1 Tbsp.

    packed light brown sugar

  • 1 Tbsp.

    onion powder

  • 2 tsp.

    ground cumin

  • 1

    1-pound T-bone steak, about 1-inch thick

  • Vegetable oil, for the grill

Directions

    1. Step 1Make the steak rub: Whisk together the salt, paprika, black pepper, garlic powder, brown sugar, onion powder and cumin in a small bowl.
    2. Step 2Season the steak generously on both sides with the spice rub. (Store any extra spice rub in an airtight container for up to 3 months.) Bring the steak to room temperature for about 30 minutes.
    3. Step 3Heat a grill to medium-high and oil the grates. Grill your steak until marked and a thermometer inserted into the thickest part registers 125˚. about 3 to 5 minutes per side. Remove the steak to a cutting board and let rest 5 to 10 minutes before slicing.
