When you need something fast, easy, and delicious for entertaining or just feeding your family, these grilled chicken skewers are the answer. They're ridiculously simple as far as grilled chicken recipes go—just sprinkle some chicken tenders with a little salt and pepper, thread them on wooden skewers, and throw them on the grill until they get golden and juicy. Thirty minutes and you're done! I've cooked these for parties on a grill pan inside, and I've made them on an outdoor grill during the summer. Both methods work like a charm. Plus, kebab recipes like this make a great hearty appetizer or main course with some summer sides. I love serving the skewers with the creamy peanut sauce in this recipe (it comes together in seconds in a blender!), but you can also go with store-bought barbecue sauce for an even easier option. When I'm making these for guests, I usually serve it with both. That way everyone can dip how they please!

Can you make the peanut sauce ahead of time?

Sure! The peanut sauce can be made up to three days in advance and stored in an airtight container in the refrigerator. If it thickens too much in the fridge, whisk in some hot water, a teaspoon at a time, until it is smooth and dippable.

Ingredients

Peanut Sauce

  • 1/2 cup

    smooth peanut butter

  • 1/4 cup

    honey

  • 1/4 cup

    soy sauce

  • 1 Tbsp.

    minced fresh ginger

  • 1 tsp.

    crushed red pepper flakes

  • 1/2 tsp.

    hot chili oil

  • Juice of 2 limes

  • 1 Tbsp.

    very hot water, as needed

Chicken Skewers

  • Vegetable oil, for the grill

  • 2 lb.

    chicken tenders, cut in half lengthwise

  • 1 1/2 tsp.

    kosher salt

  • 1 tsp.

    black pepper

  • 20

    to 25 (6-to 8-inch) wooden skewers, soaked in water

  • 1/2 cup

    fresh cilantro, minced

  • Good-quality barbecue sauce, for serving

Directions

    1. Step 1Preheat a grill or grill pan to medium heat.
    2. Step 2For the peanut sauce: In a blender, combine the peanut butter, honey, soy sauce, ginger, red pepper flakes, chili oil, and lime juice and blend, adding the hot water, 1 teaspoon at a time, if necessary, to make it very smooth. Transfer the sauce to a small dish, cover, and set aside.
    3. Step 3 Brush the grill with vegetable oil.
    4. Step 4Pat the chicken dry and season with the salt and pepper. Thread the chicken onto the skewers and grill until the chicken is cooked through, 2 to 3 minutes per side. Transfer to a serving platter and sprinkle with the cilantro.
    5. Step 5 Serve the chicken skewers with the peanut sauce and barbecue sauce for dipping.
