Steak and Vegetables with Yum Yum Sauce

Steak night is always a happy night around here, and this skillet supper brings the kind of bold, buttery flavor that gets everyone to the table fast. The steak is basted in a rich garlic butter-soy glaze with a splash of mirin, and it's all topped off with a hearty drizzle of creamy yum yum sauce. Never tried it? You're in for a treat. It's that tangy, slightly sweet sauce made from mayo, ketchup, vinegar, and seasonings like paprika and garlic that you'll find at hibachi-style steakhouses. Served with sizzling stir fried vegetables, this steak dinner checks all the boxes: quick, tasty, and fun!

Ingredients

  • 1 1/2 lb.

    boneless sirloin or strip steak

  • 1 1/2 tsp.

    kosher salt

  • 1/2 tsp.

    black pepper

  • 4 Tbsp.

    salted butter, at room temperature

  • 4

    garlic cloves, finely chopped

  • 2 Tbsp.

    vegetable oil

  • 2 Tbsp.

    mirin or dry sherry

  • 1/4 cup

    low-sodium soy sauce

  • 2

    medium zucchini, cut into 2-inch sticks

  • 1

    sweet onion, cut into 1-inch pieces

  • 1 lb.

    cremini mushrooms, quartered

  • Steamed white rice, for serving

  • bottled yum yum sauce, for serving

Directions

    1. Step 1About 30 minutes before cooking, remove the steak from the refrigerator and pat dry with paper towels. Season with 1 teaspoon salt and ¼ teaspoon pepper. 
    2. Step 2Mix together the butter and garlic in a small bowl.
    3. Step 3Heat 1 tablespoon vegetable oil in a large cast-iron skillet over medium-high heat. Add the steak and cook until well browned, 4 to 5 minutes per side for medium. During the last minute of cooking, pour the mirin and 2 tablespoons of the soy sauce over the steak, then dollop with half of the garlic butter. Remove to a cutting board and let rest for 10 minutes. Wipe out the skillet.
    4. Step 4Heat the remaining 1 tablespoon vegetable oil in the same skillet over medium-high heat. Add the zucchini, onion, mushrooms, and remaining ½ teaspoon salt and ¼ teaspoon pepper and cook, tossing occasionally, until the vegetables begin to turn golden brown, 6 to 8 minutes. Add the remaining 2 tablespoons soy sauce and garlic butter and toss to coat. 
    5. Step 5Slice the steak against the grain. Serve the steak and vegetables over rice and top with yum yum sauce.
