French Onion French Bread Pizza

This cheesy mash-up of two comfort food classics is weeknight magic.

French onion is always a yes in my book—especially on a chilly weeknight when you’re craving something cozy. Add pizza to the equation, and I’m all in. This version takes the handiest shortcut: It starts with French bread, so there’s no dough‑stretching or shaping. The split loaves are piled with sweet caramelized onions, a melty mix of gruyère and mozzarella, and a few briny olives. The result? Crispy‑edged, bubbly, deeply savory French bread pizzas that hit all the comfort notes—easy, fun, and totally satisfying.

Ingredients

  • 8 Tbsp.

    (1 stick) salted butter

  • 3 lb.

    onions, thinly sliced

  • 1 tsp.

    kosher salt

  • 1/2 tsp.

    black pepper

  • 2 Tbsp.

    balsamic vinegar

  • 2 tsp.

    chopped fresh thyme, plus more for topping 

  • 1 cup

    beef broth

  • 2

    (15-inch) loaves soft French bread, halved lengthwise and then crosswise (8 pieces total)

  • 1/2 tsp.

    garlic powder

  • 1/2 cup

    shredded gruyère cheese (about 2 ounces)

  • 1/2 cup

    shredded mozzarella cheese (about 2 ounces)

  • 1/4 cup

    pitted kalamata or Niçoise olives, sliced into rings

Directions

    1. Step 1Preheat the oven to 450˚F. 
    2. Step 2Heat 4 tablespoons of the butter in a medium skillet over medium-low heat. Add the onions and season with ½ teaspoon salt and ¼ teaspoon pepper; stir. Cover and cook, stirring once, until the onions are softened and translucent, about 10 minutes. Uncover, increase the heat to medium, and cook, stirring, until very soft and deeply golden, about 15 more minutes.
    3. Step 3 Add the balsamic vinegar and thyme to the pan and cook until fragrant, about 1 minute. Add the beef broth and cook until the liquid evaporates and the onions are caramelized, about 5 minutes.
    4. Step 4Microwave the remaining 4 tablespoons butter in a small bowl until melted. Mix in the garlic powder. Arrange the bread cut-side up on a baking sheet and brush with the garlic butter. Bake until golden and crisp, 10 to 12 minutes.
    5. Step 5Divide the caramelized onions among the bread pieces (a heaping ¼ cup per piece). Combine the gruyère and mozzarella in a medium bowl and sprinkle over the onions. Top with the olives and bake until the cheese is bubbly and golden brown, 10 to 15 minutes. Sprinkle with more thyme before serving.
