Marinated shrimp is a classic Southern appetizer that feels both elegant and effortless—and deserves a spot on every holiday table. With its bright, tangy flavor and beautiful presentation, it’s the kind of dish that instantly perks up any spread—from a holiday dinner to Easter brunch, or even a summer cookout. The cooked shrimp soak up a zesty blend of apple cider vinegar, lemon, garlic, and herbs, with thin slices of red Fresno chiles adding just enough color and gentle heat to make it pop. Think of it as a light, bright version of shrimp salad!

Add this marinated shrimp recipe to your list of trusty make-ahead appetizers. It's a host’s dream: The shrimp need only a quick simmer before marinating overnight, which means all the prep happens long before guests arrive. The result is plump, tender shrimp infused with a lively, pickled flavor—perfect for serving in a glass bowl with little forks or alongside other party bites. It’s light, refreshing, and full of coastal charm, proving that sometimes the simplest dishes are the most impressive.

Can marinated shrimp be made with precooked shrimp?
It’s not recommended. Precooked shrimp can easily become overcooked and a bit rubbery after a stint in the acidic marinade. Poaching the shrimp yourself ensures they don't overcook and stay plump and tender while soaking up all that bright, tangy flavor. By all means, pick up a bag of frozen peeled and deveined raw shrimp so you don't have to do all the prep work yourself.

What vinegar should you use for marinated shrimp?
Apple cider vinegar gives the shrimp a bright tang and balanced depth of flavor. If you prefer a milder or slightly sweeter taste, try swapping the apple cider vinegar for white wine vinegar or champagne vinegar. Both will give the dish a lighter flavor without losing that signature tang.

Can you serve marinated shrimp as a main course?
Absolutely! While it’s often served as an appetizer, marinated shrimp makes a wonderful light meal, too. Spoon it over a crisp salad, toss it with chilled pasta, or pile it onto a soft roll for a refreshing sandwich that tastes like summer any time of year.

Ingredients

  • 1 1/2 tsp.

    kosher salt, plus more for the pot

  • 2 lb.

    large shrimp, peeled and deveined (thawed if frozen)

  • 3/4 cup

    apple cider vinegar

  • 1/2 cup

    vegetable or canola oil

  • Juice and zest of 1 lemon

  • 1/4 cup

    fresh parsley, roughly chopped

  • 2 Tbsp.

    fresh cilantro, roughly chopped

  • 4

    garlic cloves, crushed

  • 1 tsp.

    sugar

  • 1/2 tsp.

    black pepper

  • 2

    bay leaves

  • 1 to 2 Fresno chiles, thinly sliced

  • 1/2

    Vidalia onion, thinly sliced

Directions

    1. Step 1Bring a large pot of generously salted water to a boil. 
    2. Step 2Make an ice bath by filling a large bowl with ice. Nestle a medium bowl in the ice (this will chill the shrimp quickly without making them waterlogged). 
    3. Step 3Reduce the water to a simmer and add the shrimp. Give them a stir, then cover and turn off the heat. Let the shrimp sit until pink, curled, and opaque throughout, 3 to 4 minutes. Using a slotted spoon, transfer the shrimp to the bowl set over the ice bath. Gently stir every few minutes to cool them down.
    4. Step 4Meanwhile, make the marinade. In a large bowl, whisk together the apple cider vinegar, vegetable oil, lemon juice and zest, parsley, cilantro, garlic, sugar, pepper, and salt until the salt and sugar are dissolved. Add the bay leaves, chiles, onion, and cooled shrimp and toss to combine. 
    5. Step 5Cover and refrigerate the shrimp for at least 24 hours and up to 2 days, allowing the flavors to soak in deeply. Give the shrimp a stir once or twice during that time to ensure they marinate evenly. 
    6. Step 6Remove the bay leaves before serving. Serve chilled or at cool room temperature.

Tip: Marinated shrimp will keep for up to 2 days in the refrigerator.
