Shrimp Salad Rolls

They're the perfect summer lunch!

Theres nothing I love more than a cold salad. Egg salad and chicken salad are two of my favorites and now I can add this shrimp salad roll recipe to the list! It is just about the easiest sandwich to put together. They start with fresh or frozen cooked shrimp (be sure to fully thaw before making if using frozen!) tossed with some mayonnaise, lemon juice, celery, and fresh herbs that are piled high into a toasted bun. You could even skip the bun if you want and just serve the shrimp salad over a bed of lettuce. I like serving these with some classic potato chips but you could also have them with french fries, potato salad or pasta salad.

Can you make the filling for the shrimp rolls in advance?
You shouldn't make seafood recipes too far in advance. but you could make this shrimp salad mixture up to 12 hours before you want to serve it.

How long will the leftover filling be good for?
If you have any leftover shrimp salad roll filling that you didn't use you can store it tightly covered in the refrigerator for up to 24 hours.

Can you serve the shrimp salad on another type of roll?
You sure can! Hot dog buns are the traditional New England-style of serving shrimp rolls, but you could use any type of bun you like. Brioche buns, hamburger rolls, a baguette, or even mini slider rolls would be great to try!

Ingredients

  • 1/2 cup

    mayonnaise, plus more for the buns

  • 1

    large celery stalk, finely chopped

  • 2

    tablespoons chopped fresh dill, plus more for garnish

  • 1 Tbsp.

    chopped fresh chives

  • 1 Tbsp.

    fresh lemon juice

  • 1/2 tsp.

    kosher salt

  • 1 lb.

    cooked medium shrimp, chopped

  • 4

    hot dog buns

  • 4

    large lettuce leaves

  • Potato chips, for serving

Directions

    1. Step 1Stir together the mayonnaise, celery, dill, chives, lemon juice and salt in a large bowl.
    2. Step 2Add the shrimp to the bowl and gently stir to combine.
    3. Step 3Heat a large cast-iron skillet over medium heat. Spread both sides of the buns lightly with mayonnaise.
    4. Step 4Toast the buns in batches until golden, about 2 minutes per side.
    5. Step 5Lay the lettuce leaves inside the toasted buns, then fill with the shrimp salad. Garnish with more dill and serve with chips.
