When it comes to easy appetizers, stuffed celery will always have a special place in my heart. It’s crunchy, creamy, salty, and totally irresistible—a simple classic that never goes out of style. This version takes the old-school favorite and gives it a delicious update with a tangy, savory filling made from cream cheese, lemon, green olives, and crunchy walnuts. It’s the perfect combination of textures and flavors: smooth and rich with just the right amount of bite from the celery.

These stuffed celery sticks are ideal for holiday parties, game-day spreads, or family gatherings, and they can easily be made ahead of time. They’re cool, refreshing, and a nice, light balance to some of my favorite heavier appetizers like pigs in a blanket and cocktail meatballs. Serve them alongside cheese and crackers or deviled eggs for a nostalgic snack tray that always disappears fast.

How do you make stuffed celery?

This recipe comes together in minutes and looks so pretty on a platter. You’ll whip the cream cheese mixture until light and fluffy, then fold in the chopped olives and nuts for extra flavor and crunch. A little lemon juice and zest brighten it all up, and a sprinkle of paprika and chives adds the finishing touch.

Can you make stuffed celery ahead of time?

You sure can! Stuffed celery can be prepared a day in advance and stored in the fridge. Just cover it tightly so the celery stays crisp and fresh.

Can you use different mix-ins for the filling?

Absolutely. Try adding chopped herbs, shredded cheese, or crumbled bacon for a fun twist. You can also swap the green olives for black olives or even diced pickles for a milder flavor.

Ingredients

  • 1

    (8-ounce) package cream cheese, at room temperature

  • 2 Tbsp.

    heavy cream

  • Juice of 1/2 lemon, plus 1 teaspoon lemon zest

  • 1/2 tsp.

    kosher salt

  • 1/4 tsp.

    garlic powder

  • 1/4 tsp.

    black pepper

  • 15

    pimiento-stuffed green olives, finely chopped

  • 1/4 cup

    chopped walnuts

  • 8

    stalks celery, cut into thirds

  • Sweet paprika, for garnish (optional)

  • Chopped fresh chives, for garnish

Directions

    1. Step 1In a stand mixer fitted with a paddle attachment or in a large bowl with a hand mixer, combine the cream cheese, heavy cream, lemon juice, lemon zest, salt, garlic powder, and pepper. Beat on medium speed until light and fluffy, 2 to 3 minutes. Fold in the chopped olives and walnuts. 
    2. Step 2Transfer the mixture to a piping bag with the tip cut or a plastic zip-top bag with a corner cut. Pipe the filling into the celery. Garnish with a dusting of paprika, if desired, and a sprinkle of chives.
