I'm all for a simple slice of cold, juicy watermelon on a scorching hot day, but when you really want to jazz things up and have a little fun, this watermelon pizza is the perfect summer treat. You start with big, beautiful slices of watermelon as your “crust,” spread on some sweetened Greek yogurt like it’s your pizza sauce, and then pile on whatever toppings your heart desires—fresh fruit, a drizzle of chocolate, maybe even a few mint leaves if you’re feeling fancy. It's quick and simple and kids absolutely love it. Just slice up the watermelon, set out all the toppings, and let them run wild with different flavor combinations! If you're looking for summer activities for kids, easy Fourth of July dessert recipes, or just ways to eat more watermelon recipes before the season is over, this is an adorable (and delicious!) treat to try.

What other toppings can you use on watermelon pizza?

Feel free to experiment with any fresh fruit like raspberries, blackberries, sliced peaches, or diced mango. If you like a little crunch, you could sprinkle on granola or chopped nuts. Shredded coconut would be scrumptious, too!

Can you make watermelon pizza ahead of time?

No, this is one of those fruit dessert recipes that should be enjoyed immediately so the fruit stays as fresh as possible. If you want to work ahead, the sweetened yogurt can be stirred together a day in advance and stored in an airtight container in the refrigerator until ready to use.

Ingredients

Chocolate Ganache

  • 4 oz.

    semisweet chocolate, broken into pieces

  • 1/2 cup

    heavy cream

  • 1/2 tsp.

    vanilla extract

Sweetened Yogurt

  • 3/4 cup

    plain Greek yogurt

  • 5 Tbsp.

    powdered sugar

Watermelon Pizza

  • 1

    small watermelon (about 5 pounds), cut into 1-inch-thick slices

  • 2 cups

    sliced strawberries (about 10 ounces)

  • 1 1/2 cups

    blueberries (about 9 ounces)

  • 1/2 cup

    pomegranate seeds (about 3 ounces)

  • 4

    kiwis, sliced

  • 1

    bunch fresh mint

  • 1

    (4-ounce) bar white chocolate

Directions

    1. Step 1For the chocolate ganache: Place the semisweet chocolate in a medium heatproof bowl. In a small saucepan, heat the cream over medium heat until very hot and just beginning to simmer. Add the vanilla, then pour the mixture over the chocolate. Let sit 1 minute so the chocolate softens, then stir to completely melt. Set aside to cool slightly, about 10 minutes.
    2. Step 2For the sweetened yogurt: In a medium bowl, whisk together the yogurt and powdered sugar until smooth. Set aside.
    3. Step 3For the watermelon pizza: Spread the watermelon slices with the sweetened yogurt. Top with the strawberries, blueberries, pomegranate seeds, kiwis, and mint leaves. Drizzle with the chocolate ganache and use a vegetable peeler or cheese grater to shave the white chocolate over the tops. Cut into wedges for serving.
